The handle is composed of very fine layers of laiton or bronze dipped in an epoxy resin which is either translucid or colored.

9.47 is a table story, but also a wine story. This atypical table knife was imagined by former 1 Michelin star chef Yves Charles.
At the end of 2004, during a meal organised by Yves Charles in his restaurant with friends, some dinner guests were about to enjoy an succulent duck breast. Some had taken their own pocket knives "Le Français" by Perceval; the others used those dressed on the table. They noticed that the meat was perfectly cut with pocket knives, whereas it rolled laboriously under the thread of the restaurant's knives.
Yves questionned himself: " Would it be possible to find the same edge than those pocket knives on table knives ? "
The idea was born : go back to the origin of a knife's function: its cutting edge. A table knife should be designed with as much care as a pocket knife. After many discussions around this project during the evening, they came to the conclusion that this knife would take the same shape than the model which inspired the idea. A large part of this creative energy had been probably maliciously inspired by the wine shared during this meal.
A "primeur" wine with 9,47° alcohol, produced by one of the dinner guests: Stéphane Majeune from the Peyra domain. This wine was about to give its name to this new project : the 9.47 table knife.
Inspired by the simplicity of the "Le Français" model, Yves Charles created his "signature" table knife, the 9.47, while working as a Michelin-starred restaurateur in Paris. The idea was simple: produce a table knife with the same qualities as a folding knife. This model is designed to appeal to lovers of knives with excellent cutting power combined with an attractive, user-friendly shape, that is equally good at cutting soft white squid meat or a thick steak with shallots.
Simple and elegant, the 9.47 knife stands out with its sleek, timeless lines.
- Perceval table knives are not dishwasher safe.
The dish washer exposes knives to "metal-to-metal" contacts which significantly reduce their cutting capacity. Moreover, detergent products (washing products, salt, rinsing liquid, etc.) create chemical reactions with metal of the blades that may damage them.
Natural materials of the handles are water sensitive. In case of water contact, you should wipe them quickly.
- Table knives should be cleaned with warm soapy water and a spong (without scourer). You must never use abrasive pads which create deep scratches and remove the blade' brightness.
Rinse your knives with warm water before wiping it and carefuly store them to guarantee a extended lifetime.
- Table knives sharpening should be made with a sharpening steel. The use of wheel or power grinder is not recommanded to people who are not professionnal.
