Forged Ham knife in 100% Triple A steel. Mounted on a slim flet tang, Arizona Ironwood Burl handle, screw-fixed and decorated with mosaic rivets. Straightening, assembly, shaping, polishing and hand finishing is all done in our workshop in Thiers.
The handle is in Arizona Ironwood Burl, a precious wood. It is one of the heaviest and densest wood in the world. Under light golden reflections appear in the essence of the wood.
Not dishwasher proof. We advise you to wash and rinse the knife in warm water, and dry immediately.

This Ham knife, fully forged in Triple A steel, boasts exceptional sharpness that lasts over time.
The blade will nevertheless have to be sharpened regularly using a finely striated ovoid sharpening steel.
- Perceval kitchen knives are not dishwasher safe.
- Perceval kitchen knives should be clean with warm soapy water and a sponge (without scourer). You must never use abrasive pads which create deep scratches and remove the blade' brightness.
Rinse your knives with warm water before wiping it and carefuly store them to guarantee a extended lifetime.
- A regular sharpening with an avoid steel (with thin streaking) is recommanded to keep a long lasting original edge.
We recommend a sharpening in our workshop once a year.
